Kajjaya | ದೀಪಾವಳಿ ವಿಶೇಷ ಗರಿಗರಿಯಾದ Kajjaya | Adhirasam
Ingredients:
250g sona masuri rice
2 tsp poppy seeds
2 tsp sesame seeds
200g jaggery
50 ml of water
¼ tsp cardamom powder
Oil for deep frying
Method:
Wash and soak the rice for about 4 hours.
Then drain the water. (leave the rice in a sieve for 30 or spread over the dry cloth).
Grind the rice into a fine powder (make sure the rice is still moist not dried completely).
In a large bowl add rice flour, poppy seeds & sesame seeds, mix well.
In a heavy bottom, pan add jaggery and water.
Boil the jaggery syrup on medium heat and then simmer and stir continuously on low heat for 5 minutes-
Add a drop of jaggery syrup to a plate with 2 tbsp of water.
(If the syrup remains as a lump then it's ready).
Now add cardamom powder into rice mixture and mix.
Add the flour into jaggery syrup and stir continuously.
Turn off the stove and let it cool down completely.
Grease the butter paper with some oil.
Pinch a small lemon sized dough and pat it.
Deep fry in medium hot oil and fry until both the sides turn golden and slightly crisp.
Gently press the Kajjaya | Adhirasam to remove of excess oil.
