Protein Quinoa Salad
Ingredients:
1 tablespoon lemon juice
2 tablespoons olive oil
Salt to taste
Pepper to taste
Fresh herbs: chopped parsley and mint
100g cherry tomatoes, chopped
100g cucumber, diced
30g olives
50g feta cheese or 30g sunflower seeds (for a dairy-free option)
80g cooked quinoa Optional: 100g white beans (for extra protein)
Method:
In a large bowl, add lemon juice, olive oil, salt, pepper, and fresh herbs. Mix well.
Next, combine the cucumber, tomatoes, feta cheese (or sunflower seeds), olives and cooked quinoa.
Add the white beans if using.
Toss everything gently until well mixed.
Serve chilled or at room temperature.
