How to Make Perfect & Easy Balushahi Recipe | Badusha Sweet for Diwali

For the sugar syrup:  



  • 1 cup sugar 

  • 1/2 cup water 

  • 3-4 drops lemon juice 

  • 1/2 teaspoon cardamom powder 

  • 1/2 teaspoon rose water  



Ingredients for the dough:  



  • 11/4 cup all-purpose flour (maida) 

  • 50g butter 

  • 1 teaspoon sugar 

  • 1/2 teaspoon baking powder 

  • 1/2 cup water or as needed 

  • Oil or frying   



For garnish: 



Rose petals 

1-2 tbsp pistachios   



Method:  



  1. In a pan, boil sugar and water until the mixture reaches a one-string consistency.

  2. Turn off the heat and add lemon juice, cardamom powder and rose water. 

  3. Keep warm. Beat the butter, 1 teaspoon sugar and baking powder for 10 minutes or until light & fluffy. 

  4. Add flour and mix until crumbly. 

  5. Add water and knead gently to form a soft dough. 

  6. Don’t over-knead. Cover and rest for at least 10 minutes. 

  7. Divide the dough into small balls. 

  8. Flatten slightly and make a small dent in the centre (helps it cook evenly). 

  9. Heat the oil on low-medium heat. 

  10. Fry the Badushas until golden brown and crisp. 

  11. Keep the flame low to cook evenly inside. 

  12. Remove and drain excess oil. 

  13. Dip warm Badushas in warm sugar syrup and let them soak in the syrup for 14 to 15 minutes. 

  14. Garnish with rose petals and pistachios. 

  15. Serve once slightly cooled. Flaky, sweet, and delicious!
