Easy Balushahi Recipe | Badusha | Khurmi | Perfect Balushahi with Tips & Tricks


  • 130g All Purpose Flour

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 60 ml melted Ghee

  • 40 ml water Approx.

  • Oil for deep frying

For Sugar Syrup:

  • 1/4 kg sugar 

  • 40 ml water Approx. (as needed)

  • 1 tsp lemon juice  & some saffron

  • 1/4 tsp cardamom powder


  1. In a large bowl, add flour, baking soda, baking powder and ghee and mix. 

  2. Once it is mixed, add water little by little and mix well to a soft dough ( Don't knead the dough too hard). 

  3. Allow this dough to rest for 15 mins while you make the sugar syrup.  

  4. Add sugar and water to a pan and bring it to a boil.  

  5. Add lemon and saffron, then add in cardamom powder.  

  6. Cook till it reaches one string consistency or tacky. Keep the syrup warm.   

  7. Roll up the dough into a tube form and cut it into the desired size. 

  8. Make the dough into balls and flatten it, make a dent in the centre. (Don't correct any cracks). 

  9. Heat oil and fry them until it turns golden brown. (On a medium to low heat).  

  10. Now drain it and add it to the warm sugar syrup. 

  11. Let it soak for 3 to 4 minutes. 

  12. Drain it and garnish it with pistachio or almond.
