Softest & Spongy Idli Batter Recipe | Idli without a Steamer


  • 2 cups rice (I used normal rice)

  • 1/2 cup urad dal

  • 1cup precooked rice

  • Salt as needed

  • 2 cups water (Approx.)

  • 1/4 tsp baking soda


  1. Wash the rice and urad dal until the water runs clear, then add precooked rice.

  2. Add enough water and soak for 3-4 hours.

  3. Drain the water again and grind coarsely along with 2 cups of water (Approx.)

  4. Pour it into a big container. Add salt and baking soda, mix well.

  5. Leave this batter to ferment overnight. Next morning stir well the batter (Add a little water if required).

  6. Pour into greased idli moulds keep that aside.

  7. In a pressure cooker add 2 cups of water and place the moulds, cover and cook without the weight for 10-12 mins for super soft and spongy idlis.
