Breakfast - High Protein Omelet
Servings - 2
Ingredients:
4 eggs 150g mixed vegetables (chopped bell pepper, zucchini, tomatoes, mushrooms)
1 onion
1/2 cup oats
Olive oil
Salt and pepper to taste
Chilli flakes to taste
Method:
In a bowl, add the chopped vegetables and oats.
Add salt, pepper. chilliflakes and eggs.
Beat the eggs and rest the mixture for 2 minutes.
Heat olive oil in a non-stick pan over medium heat.
Pour the egg mixture into the pan.
Cook gently for 2-3 minutes until the bottom is set.
Flip the omelet and cook for another 1-2 minutes until fully cooked.
