Breakfast - High Protein Omelet

Servings - 2



Ingredients: 



  • 4 eggs 150g mixed vegetables (chopped bell pepper, zucchini, tomatoes, mushrooms) 

  • 1 onion 

  • 1/2 cup oats 

  • Olive oil 

  • Salt and pepper to taste 

  • Chilli flakes to taste  



Method: 



  1. In a bowl, add the chopped vegetables and oats. 

  2. Add salt, pepper. chilliflakes and eggs. 

  3. Beat the eggs and rest the mixture for 2 minutes. 

  4. Heat olive oil in a non-stick pan over medium heat. 

  5. Pour the egg mixture into the pan. 

  6. Cook gently for 2-3 minutes until the bottom is set. 

  7. Flip the omelet and cook for another 1-2 minutes until fully cooked.
