How to make easy method Akki Rotti | Rice Roti | Gluten Free Rice Flour Flatbread Recipe
2 cups rice flour, fine
1/2 tsp salt
1 tbsp oil (Optional)
2 cups hot water (1/4 cup extra if required)
In a large bowl, add rice flour, salt, oil and mix well.
In a pot boil, 2 1/4 cups of water, add boiling water to the rice flour and start mixing using a spatula. (Add water little by little).
Mix well until all the water is evenly absorbed with the flour.
Wait for a few minutes if you want to knead with your hands or continue with a spatula.
Knead the dough smooth for 5 minutes; once the dough is smooth, take an orange-sized ball of dough.
Pat and flatten the dough on greased wax paper or dust a dough ball in dry rice flour and roll the dough into an even circle about 10 to 12 inches. (Be gentle while patting or rolling).
Place the flattened roti on hot tawa and cook slowly on medium heat.
Once you start seeing the small bubbles, flip the roti and cook on the other side.
Drizzle some oil and cook both sides, pressing gently.
Serve them with coconut chutney, sabzi, or any curry.
