Ingredients:

• 225g butter softened

• 1 1/2 cups sugar

• 1 egg

• 2 1/2 cups all-purpose flour

• 1/2 teaspoon baking powder

• 1/4 teaspoon salt

• 1 teaspoon vanilla

Method:

1. Cream together butter and granulated sugar for 3 minutes. 

2. Add egg and vanilla, beat until light and fluffy.

3. Stir in flour, baking powder, salt. 

4. Refrigerate for 20 minutes. 

5. Roll into balls. (Small gooseberry size, small lime size, and small lemon size).

6. Place cookie dough onto baking sheet, spacing about 1½-inches to 2 inches apart. 

7. Bake for 8 to 10 minutes or until golden brown.
