How to Make the Best Shortbread
Ingredients:
5 tbsp butter, at room temperature
A pinch of salt
1/4 cup powdered sugar
1 tsp vanilla extract
1 cup all-purpose flour
1 tbsp milk
For Filling:
100g butter
1 tsp vanilla extract
1 1/2 cup powdered sugar
1 tbsp milk
Colour
Method:
Whisk together butter, vanilla extract, salt, and powdered sugar in a bowl until light and creamy.
Add in the flour and mix until combined.
Next, add milk, mix well and make a stiff dough.
Roll out dough to 1/2 thick circle and cut into small circles using a round cookie cutter.
Transfer them onto a baking sheet lined with parchment paper.
Prick the cookie with a fork to create a pattern onto the top.
Now, chill them in a refrigerator for at least an hour. Meanwhile, in a large bowl, add butter, vanilla extract, powdered sugar and milk.
Beat for 3 to 4 minutes or until light and fluffy.
Divide the filling into two portions and add colour; mix well keep that ready.
After one hour, bake the cookies at 170 C for 9 to 10 minutes.
Let the cookies cool completely.
Fill 1/2 tablespoon filling on 1 cookie and sandwich with another.
Chill the cookies for 30 minutes or until firm, then serve.
