How to Make the Best Shortbread


  • 5 tbsp butter, at room temperature  

  • A pinch of salt 

  • 1/4 cup powdered sugar 

  • 1 tsp vanilla extract 

  • 1 cup all-purpose flour  

  • 1 tbsp milk  

For Filling: 

  • 100g butter 

  • 1 tsp vanilla extract 

  • 1 1/2 cup powdered sugar 

  • 1 tbsp milk 

  • Colour   


  1. Whisk together butter, vanilla extract, salt, and powdered sugar in a bowl until light and creamy. 

  2. Add in the flour and mix until combined. 

  3. Next, add milk, mix well and make a stiff dough. 

  4. Roll out dough to 1/2 thick circle and cut into small circles using a round cookie cutter.

  5. Transfer them onto a baking sheet lined with parchment paper. 

  6. Prick the cookie with a fork to create a pattern onto the top. 

  7. Now, chill them in a refrigerator for at least an hour. Meanwhile, in a large bowl, add butter, vanilla extract, powdered sugar and milk. 

  8. Beat for 3 to 4 minutes or until light and fluffy. 

  9. Divide the filling into two portions and add colour; mix well keep that ready. 

  10. After one hour, bake the cookies at 170 C for 9 to 10 minutes. 

  11. Let the cookies cool completely. 

  12. Fill 1/2 tablespoon filling on 1 cookie and sandwich with another.  

  13. Chill the cookies for 30 minutes or until firm, then serve.
