Mangalore Buns Recipe

Ingredients:  



  • 2 ripe bananas (about 250g) 

  • 3 tbsp sugar (adjust more or less to taste) 

  • 1 tsp cumin seeds 

  • 1/4tsp salt 

  • 1/2 tsp baking soda 

  • 1 tbsp oil 

  • 1/4cup yoghurt 

  • 2 cups flour (all-purpose, whole wheat, or a mix) 

  • Oil, for deep frying  



Method:  



  1. Take ripe bananas in a bowl, add sugar, salt, cumin seeds, baking soda, oil, and yoghurt.  

  2. Mash very well until smooth (no big lumps). 

  3. Mix nicely until the sugar dissolves. 

  4. Add flour little by little and mix until a soft dough forms. (Do not add water unless needed. 

  5. Banana and yoghurt moisture is usually enough.) 

  6. Apply oil, cover, and rest overnight (important for soft, fluffy buns). 

  7. After resting, take small balls and roll gently into small, thick discs (Thicker than poori). 

  8. Heat oil for deep frying. 

  9. Fry one at a time on medium heat. 

  10. Press lightly so it puffs. Fry until golden brown on both sides. 

  11. Serve with Coconut Chutney/Peanut Chutney or enjoy plain (traditional way). 



Tips: 


Dough should be soft, not sticky. 

If sticky, sprinkle a little flour. 

Medium heat oil gives the best puff and colour.
