300 g milk chocolate
100 g butte
1 tbsp golden syrup
100 g marshmallows, chopped or mini
100 g digestive biscuits, roughly chopped
1/4 cup almonds or walnuts
1/4 cup raisins or cranberries or popcorns
Line a loaf tin with baking paper.
Roughly chop the biscuits to small bite-size and set them aside.
Cut the marshmallows and set them aside.
Add 200 grams of finely chopped chocolate, butter, and golden syrup to a large bowl.
Microwave on high for 1 minute and stir well.
Continue to microwave for one more minute or until it’s just melted. (Don’t overheat).
Add in the almonds, biscuit pieces and raisins to the chocolate and mix well.
Add marshmallows to the chocolate and mix well.
Transfer into the prepared tin and spread.
Melt another 100 grams of chocolate and spoon this over the mix to fill any gaps at the top.
Place in the refrigerator to set for about 2 hours or overnight.
Cut into slices and enjoy the rocky road bars.
