Salmon with Cherry Tomatoes and Basil

Servings: 2


Ingredients: 



  • 400g salmon fillets 

  • Salt & pepper to taste 

  • 3 tablespoons olive oil 

  • 1 tablespoon minced garlic 

  • Green peppers to taste 

  • Zest of 1 lemon 

  • 1 1/2 cups cherry tomatoes 

  • 1/4 cup chopped basil leaves 

  • 1/2-1 lemon, juiced  



Method: 



  1. Marinate the salmon with salt & pepper for 10 minutes. 

  2. Heat 1 tablespoon olive oil, add garlic and green peppers. 

  3. Sauté for 2-3 minutes or until aromatic. 

  4. Next, add lemon zest and stir. 

  5. Add cherry tomatoes and season with salt and pepper to taste. 

  6. Cook on medium-low heat for 3-4 minutes. 

  7. Stir in the basil leaves and lemon juice. 

  8. In another pan, heat 2 tablespoons olive oil. 

  9. Place parchment paper and place the salmon. (Using the parchment paper is optional). 

  10. Cook the salmon for 4 minutes, and after 4 minutes, flip and cook for 2-3 minutes more. 

  11. Arrange the salmon on a serving plate and spread the tomato sauce.
