Microwave Chocolate Fruit Cake in 10 Minutes

Servings - 4 - 6



Ingredients: 



  • 2 tbsp cocoa powder 

  • 4 tbsp water 

  • 1 cup all-purpose flour 

  • 1/3 cup brown sugar 

  • 1/4 tsp cloves powder 

  • 1/2 tsp cinnamon powder 

  • 1/4 tsp nutmeg powder 

  • 1/4 tsp ginger powder 

  • 1 tsp baking powder 

  • 1/4 cup candied lemon peels 

  • 1/4 cup candied orange peels 

  • 1/4 cup raisins  

  • A pinch of salt 

  • 1/4 cup roasted almonds 

  • 1/4 cup melted butter 

  • 3/4 cup buttermilk 

  • 1/2 tsp vanilla extract  



Method: 



  1. In a small bowl, mix together cocoa powder and water. 

  2. In a large bowl, add the flour, sugar, cloves powder, cinnamon powder, nutmeg powder, ginger powder, baking powder, lemon peels, orange peels, raisins, salt and almond. 

  3. Mix well, and keep that aside. 

  4. Whisk the butter, buttermilk and vanilla in a bowl. 

  5. Then combine wet and dry ingredients (Don't over mix the batter). 

  6. Once everything is mixed and in the cocoa mixture and fold in. 

  7. In a microwave container place, the parchment paper. 

  8. Pour the batter into the prepared container and microwave for 5 minutes or until an inserted skewer comes out clean. (My cake took exactly 5 minutes to cook). 

  9. Let the cake cool down completely, and then dust with powdered sugar.
