Ghost Cupcakes for Halloween | Pumpkin Cupcakes
1/2 cup sugar
1/3 cup oil
1 tsp vanilla extract
1 tsp cinnamon
1/4 tsp baking soda
1 tsp baking powder
A pinch of salt
1 cup grated pumpkin
Buttercream frosting or any frosting Chocolate chip cookies
Chocolate sprinkles or any sprinkles
Preheat oven to 180°C and prepare a cupcake pan with liners.
In a large bowl add egg, sugar, oil and vanilla.
Beat for a minute and then add flour, cinnamon, baking powder, baking soda and salt.
Beat for a minute, then add pumpkin and stir to combine, (Do not to over mix!).
Fill cupcake tins about 2/3 full. Bake at 180°C for 18-20 minutes or until golden brown.
Remove from oven and allow to cool completely before frosting and decorate.
