Ingerdients:
6 sandwich bread slices
Butter as required
1/4 cup green bell pepper, finely chopped
1/4 cup yellow bell pepper, finely chopped
1/4 cup red bell pepper, finely chopped
1/4 cup red onion, finely chopped
1/4 cup mayonnaise
Salt
Mint chutney/Green chutney
(You can also use any other vegetables like cucumber or boiled potato or corn)
Method:
Add green bell pepper, yellow bell pepper, red bell pepper, onion, salt and mayonnaise in a large bowl.
Mix well, and keep that aside. Now, keep the bread, butter, chutney, and veggie mayonnaise mixture ready before start assembling the sandwich.
Take 1 bread slice, spread butter 1st and then green chutney and then add veggie mixture.
Now spread the butter on the second bread slice and cover the 1st bread.
Spread the butter and keep that aside; repeat the same with the other bread slices.
Heat the grill pan on low heat and place the sandwich carefully on the grill pan, butter-side down.
Lastly, spread the butter on the top of the sandwich.
Be careful while spreading the butter because the pan is hot; don't burn yourself.
Grill the sandwiches on medium heat until they are crispy and golden brown for a few minutes.
Flip, press gently and grill another side as well.
Remove it to a plate, slice and serve a super easy Bombay Vegetable Grilled Sandwich.
