Rava Eggplant | Shallow Fried Aubergine With Semolina | Shallow Fried Eggplant
1 eggplant / aubergine
1/2 tsp red chilli powder
1/4 tsp turmeric powder
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp garam masala powder
1/2 tsp amchoor powder/mango powder
1/2 cup semolina/rava
Salt to taste
In a bowl, mix in the red chilli powder, turmeric powder, coriander powder, cumin powder, garam masala powder, amchoor powder and salt.
Cut the eggplant into thick or thin slices.
Coat the eggplant slices evenly on both sides with the spices mixture.
Let the eggplants rest for 4 - 5 minutes. (The eggplants ooze out water which makes semolina stick easily).
Now, coat the eggplant slice with the semolina on both sides and keep that aside.
Heat a skillet/tawa, drizzle the oil and place a few eggplant slices.
Again drizzle the oil on the eggplant slices.
Flip and cook both sides for 3 to 4 minutes or until done.
Note: Instead of Aubergine you can use Fish.
