Mango Churumuri | How to make quick & spicy mango churumuri at home
4 cups puffed rice (mandakki, murmura, pori)
1/2 cup grated carrot
1/2 cup chopped cucumber
1/4 cup chopped
1/2 cup grated semi-ripe mango or raw mango
Salt to taste
1 tbsp coconut oil + 1 tsp extra
1/4 cup roasted peanuts
2 - 3 tsp green chutney/mint chutney
Microwave the puffed rice for a minute or lightly roast the puffed rice with 1 tsp of coconut oil until crisp.
In a large bowl, add in the carrot, cucumber, onion, mango, salt, green chutney, coconut oil and peanuts. Mix all the ingredients well.
Add puffed rice, and mix the puffed rice quickly with the masala.
Serve churumuri immediately.
