Chicken Taco with Sour Cream


  • 500 g chicken breasts  

  • 35 g taco seasoning mix 

  • 2 + 1 tbsp olive oil 

  • 1 large onion 

  • 1/4 cup tomato sauce 

  • Salt to taste 

  • 1 cup red kidney beans, cooked 

  • Taco shells 

  • Red onion 

  • Bell pepper - red, green & yellow 

  • Sour cream 

  • Fresh coriander, optional  


  1. Add chicken to a large bowl, add taco seasoning mix and coat the chicken completely.  

  2. Cover the chicken and rest for at least 10 minutes.  

  3. Heat 2 tbsp olive oil in a large pan and add the chicken. 

  4. Cover and cook the chicken to medium-high heat for 8-10 minutes per side or until done.

  5. Remove the chicken from heat, let it cool for at least 5 minutes and then shred.  

  6. Now heat 1 tbsp olive oil in a pan, add in the onion and saute for a minute. 

  7. Add tomato sauce, salt and cook for a minute. Then add kidney beans, mix well.  

  8. Add the shredded chicken, combine everything well. 

  9. Assemble tacos by placing about 1/4 cup of chicken, red onion, bell pepper into each shell.  

  10. Top with a tablespoon of sour cream and fresh coriander.  

Taco Seasoning: 

  • 1 tsp garlic powder 

  • 1 tsp onion powder 

  • 1 tsp oregano oregano 

  • 1 teaspoon black pepper 

  • 4 tbsp chilli powder 

  • 2 tbsp cumin powder 

  • 1 tbsp paprika  powder 

  • 1 tbsp salt or salt to taste 


In a jar, add all the spices, cover tightly and shake.
