Spaghetti Aglio e Olio Authentic Italian Recipe


  • 500 g uncooked spaghetti 

  • 1/2 cup olive oil + 1 tsp olive oil extra 

  • 1/4 cup minced garlic 

  • Chilli flakes to taste (Optional)

  • Salt to taste 

  • Freshly ground black pepper to taste 

  • Fresh parsley 

  • 1/2 cup parmesan cheese or to taste  


  1. In a cold pan, add olive oil and garlic, then turn on the heat. 

  2. Stir and cook the garlic on medium-low heat until it turns golden brown. 

  3. In a large pot, add water, salt and olive oil, bring the water to a rolling boil. 

  4. Add spaghetti to the boiling water, cook the spaghetti for 10 to 12 minutes or until cooked. 

  5. Drain water and transfer the cooked spaghetti to a bowl. 

  6. Now add in the chilli flakes, pepper, salt, and pour in the garlic olive oil mixture. 

  7. Sprinkle some parsley and toss the spaghetti continuously until it is evenly coated in the garlic sauce.  

  8. Sprinkle parmesan cheese and serve immediately.
