2 tbsp Olive Oil
2 tsp Garlic Powder
Salt to taste
Crushed Red Pepper to taste
1 tsp Oregano
Puff Pastry Sheet
Sliced Mozzarella Cheese
Melted butter or Egg wash
In a bowl mix in the olive oil, garlic powder, salt, red pepper, and oregano.
Unwrap one sheet of the puff pastry sheet and cut into a rectangle.
Place the eggplant slice leaving a 1-inch space along, and then brush some oil mixture.
Place the zucchini on the eggplant and brush some oil mixture.
Then place cheese and continue to layering with eggplant, oil mixture and zucchini.

Cove with pastry sheet, gently press the edges and transfer to the baking tray.
Brush top and sides of pastry with melted butter or egg wash.
Bake the pizza pocket at 180°C for 15 to 20 minutes.
