Rogan Josh Kashmiri Lamb Curry Recipe | Restaurant Style

Rogan Josh traditional Kashmiri lamb curry recipe is one of the most famous dishes in an Indian restaurant. Rogan Josh is a delicious, flavourful & rich lamb curry which goes well with roti, naan, chapati, poori or rice.



Servings - 3



Ingredients: 


  • 1/3 cup tomato puree  

  • 1 tsp Kashmiri chilli powder, or as required  

  • 1 tsp chilli powder, or as required  

  • 1/2 tsp turmeric powder 

  • 1 tsp cumin powder 

  • 1 tbsp garam masala 

  • 1/4 tsp nutmeg powder 

  • 1/2 tsp crushed fennel seeds 

  • 1 tbsp coriander powder 

  • 500g lamb 

  • 3 tbsp ghee or oil 

  • 4 cardamom pods 

  • 2-star anise 

  • 5 cloves 

  • 2 - inch cinnamon stick 

  • 4 bay leaves 

  • 2 tbsp garlic, finely chopped 

  • 1 tbsp ginger, finely chopped 

  • 2 large onions, finely chopped 

  • 1 cup chicken stock or vegetable stock 

  • 1/2 cup yoghurt 

  • Coriander & ginger for garnish  


Method: 

  1. In a small bowl, add tomato puree, Kashmiri chilli powder, chilli powder, turmeric powder, cumin powder, garam masala, nutmeg powder, crushed fennel seeds, and coriander powder. 

  2. Mix well, and keep that aside. 

  3. Melt the ghee over medium heat in a large, heavy-bottom pot. 

  4. Add cardamom pods, star anise, cloves, cinnamon stick,  and bay leaves. 

  5. Stir for a few seconds. Add garlic and ginger and cook for one minute. 

  6. Add onion and cook for 2 to 3 minutes, stirring frequently.  

  7. Now, add lamb, stir and cook for 2 minutes. 

  8. Add salt, chicken stock, masala paste and mix it well.  

  9. Cover the lid and adjust the heat to medium-low.  

  10. Cook the lamb for 45 minutes to 1 hour or until it is tender, giving it an occasional stir. 

  11. Remove lid, add yoghurt and stir well. 

  12. Cook for another 15 - 20 minutes to reduce the sauce slightly.  

  13. Garnish with fresh coriander leaves and ginger. 

  14. Serve with naan, roti or rice.
