HAGALAKAYI PALYA | Karela Sabzi | Healthy Bitter Gourd Stir Fry

4 karela/bitter gourd
3 - 5 tbsp oil
2 large tomatoes
Salt to taste
3 tbsp curry powder
1/2 cup water
Gooseberry sized tamarind juice
1/4 cup jaggery powder
Wash and slice the bitter gourd.
Remove the seeds and chop them into tiny pieces.
In a large bowl, pour the buttermilk and add chopped bitter gourd.
Soak the bitter gourd for 30 minutes and then drain.
Heat the oil in a skillet.
When the oil is hot, add the onion.
Cook the onion, constantly stirring, for 6-8 minutes, until the onion.
Stir in the tomato, cover and cook the tomato until soft.
Now, add bitter gourd, salt, curry powder and stir well.
Cover and cook for 2 minutes.
Remove the lid, add water and mix well.
Cover and cook the bitter gourd on medium-high heat until it's done.
Next, add tamarind juice, jaggery powder and stir.
Cover and simmer for 5 minutes or until it changes colour into brown.
