HAGALAKAYI PALYA | Karela Sabzi | Healthy Bitter Gourd Stir Fry

Servings - 4


  • 4 karela/bitter gourd  

  • 1-litre buttermilk 

  • 3 - 5 tbsp oil  

  • 3 onions  

  • 2 large tomatoes 

  • Salt to taste 

  • 3 tbsp curry powder 

  • 1/2 cup water 

  • Gooseberry sized tamarind juice 

  • 1/4 cup jaggery powder  


  1. Wash and slice the bitter gourd. 

  2. Remove the seeds and chop them into tiny pieces. 

  3. In a large bowl, pour the buttermilk and add chopped bitter gourd. 

  4. Soak the bitter gourd for 30 minutes and then drain. 

  5. Heat the oil in a skillet. 

  6. When the oil is hot, add the onion.  

  7. Cook the onion, constantly stirring, for 6-8 minutes, until the onion. 

  8. Stir in the tomato, cover and cook the tomato until soft.  

  9. Now, add bitter gourd, salt, curry powder and stir well. 

  10. Cover and cook for 2 minutes. 

  11. Remove the lid, add water and mix well. 

  12. Cover and cook the bitter gourd on medium-high heat until it's done.

  13. Next, add tamarind juice, jaggery powder and stir. 

  14. Cover and simmer for 5 minutes or until it changes colour into brown.
