Authentic Masala Dosa Stuffing Recipe | Potato Curry Recipe for Masala Dosa

Servings - 8


  • 4 potatoes, boiled & peeled 

  • 2-3 teaspoons oil 

  • 1 teaspoon mustard seeds  

  • 1 teaspoon chana dal 

  • 1 teaspoon urad dal 

  • 1 teaspoon ginger, finely chopped 

  • 2 green chillies 

  • Few curry leaves 

  • 1 large onion, thinly sliced  

  • Salt to taste 

  • 1/2 teaspoon turmeric powder

  • 2 tsp lemon juice   


  1. Boil the potatoes well and peel off the skin. 

  2. In a pan, heat the oil and add mustard seeds, chana dal, and urad dal.  

  3. Wait until mustard seeds splutter. 

  4. Then add curry leaves and chillies and fry for a minute. 

  5. Next, add ginger and stir well. 

  6. Now add thinly sliced onions and fry until they turn translucent. 

  7. Add salt and turmeric to the potatoes. 

  8. Mix well and cook for 2-3 minutes. 

  9. Squeeze lemon juice and add chopped coriander leaves. 

  10. Give it a good mix. 

  11. Serve potato paly hot with masala dosa, rice, or chapatis.
