Authentic Masala Dosa Stuffing Recipe | Potato Curry Recipe for Masala Dosa

Ingredients:
4 potatoes, boiled & peeled
2-3 teaspoons oil
1 teaspoon mustard seeds
1 teaspoon chana dal
1 teaspoon urad dal
1 teaspoon ginger, finely chopped
2 green chillies
Few curry leaves
1 large onion, thinly sliced
Salt to taste
1/2 teaspoon turmeric powder
2 tsp lemon juice
Method:
Boil the potatoes well and peel off the skin.
In a pan, heat the oil and add mustard seeds, chana dal, and urad dal.
Wait until mustard seeds splutter.
Then add curry leaves and chillies and fry for a minute.
Next, add ginger and stir well.
Now add thinly sliced onions and fry until they turn translucent.
Add salt and turmeric to the potatoes.
Mix well and cook for 2-3 minutes.
Squeeze lemon juice and add chopped coriander leaves.
Give it a good mix.
Serve potato paly hot with masala dosa, rice, or chapatis.
