Chicken Ramen with Rice Noodles & Spinach
Servings - 2
Ingredients:
250g rice noodles
200g chicken breast (sliced)
2 tablespoons oil (sesame or regular)
3 cups water
1 tablespoon chicken broth powder
2 tablespoons ramen sauce (plus extra ramen sauce)
1 tablespoon soy sauce
1 teaspoon ginger (grated)
2 garlic cloves (minced)
1 red chilli
1/2 cup mushrooms (sliced)
1 cup spinach leaves (washed)
Spring onions
Method:
Boil the rice noodles as per the package instructions, drain, and set aside.
In a pan, heat 1 tablespoon oil, add chicken and cook for 2 minutes.
Add 2 tablespoons of ramen sauce and cook the chicken until done.
In a pan, heat 1 tablespoon oil and sauté garlic, ginger, and red chilli until fragrant.
Add spring onions and mushrooms, and cook for a minute.
Pour in the water and add chicken broth powder, ramen sauce to taste, and soy sauce.
Boil and add the spinach, let the spinach wilt.
Add cooked chicken, mix well, and boil.
Reduce the heat and let it simmer for 2 minutes.
Add the cooked rice noodles to a pan or pour the hot broth with chicken and spinach over it.
