No-Bake Caramel Apple Upside Down Cake
1 tbsp butter
2 small apples, peeled and sliced into thin slices
4 tbsp sugar
1 tbsp water
2 tsp lemon juice
A pinch of salt
1 tsp cinnamon powder
4 tbsp melted butter
1/2 cup yoghurt
1/4 cup sugar
1 tsp vanilla extract
3/4 cup all-purpose flour
1/2 tsp baking powder
In a nonstick pan, add 1 tbsp of butter and melt on low heat.
Add sliced apple, 4 tbsp sugar, water, lemon juice, salt and cinnamon powder and combine well.
Cover and cook for 2 - 3 minutes on medium heat.
Remove the lid, stir and cook the apple until it's soft and caramelized.
Turn off the heat and let the apple mixture cool down completely.
Meanwhile, combine the butter, yoghurt, sugar, and vanilla extra in a large bowl.
Add the all-purpose flour and baking powder, combine.
Do not over-mix. In a greased microwave-safe bowl, spread the apple mixture.
Now pour cake batter evenly over the apple mixture.
Microwave for 2 minutes; after 2 minutes, check the cake. If necessary, cook for 1 more minute.
The cake is done when a toothpick inserted into the centre of the cake comes out clean.
Invert the cake and let it cool down. Serve slightly warm or cool.
