Savoury Egg Cheese Muffins | Filo Egg Cups

Ingredients:
Filo dough sheets
1/2 cup mushrooms, chopped
1/2 cup onion, chopped
1/4 cup spinach, chopped
1/2 cup mixed bell peppers, chopped
4 eggs
Garlic powder to taste
Chilli flakes to taste
Salt to taste
Pepper to taste
1/2 cup mozzarella (or to taste)
Smoked bacon cubes (optional)

Method:
Preheat oven to 200°C.
Lay the filo dough sheets on the counter.
Fold and cut the sheets into 8-10 cm each square.
Combine the mushrooms, onion, spinach, bell peppers, eggs, garlic powder, chilli flakes, salt, pepper, and 1/4 cup of mozzarella in a large bowl.
Lightly brush oil onto a muffin tin.
Place the filo dough squares into each muffin tin cup, shaping them to form a cup.
Spoon the vegetable and egg mixture into each filo cup.
Top with bacon cubes (if using), and sprinkle the remaining mozzarella on top.
Bake for 20-25 minutes or until the filling is set and the filo is golden brown.
