Sweet Corn Soup Recipe | Chinese Sweet Corn Soup
1 cup canned sweet corn + 1/4 canned sweet corn
2 tablespoon oil
1 teaspoon ginger, finely chopped
1 tablespoon garlic, finely chopped
3 tablespoon spring onion (white part) finely chopped
1/2 cup carrot, finely chopped
1/2 cup french beans, finely chopped
Black pepper to taste
1 teaspoon soy sauce
1/2 teaspoon vinegar
Salt to taste
1 1/2 litre vegetable stock or water
2 tablespoon cornflour +1/4 cup water
Spring onion (greens part), finely chopped
In a blender combine 3/4 of sweet corn and water, make a coarse paste and keep that aside.
Mix the corn starch with 1/4 cup water and keep that aside.
Heat the oil in a pot, add ginger, garlic, spring onion, and sauté.
Now add carrot, beans and sauté. Then add corn paste, mix well.
Then add in the pepper, soy sauce, vinegar, salt, mix well.
Cover & cook for 2 minutes on medium heat or until vegetable is soft and tender.
Now add vegetable stock or water and stir, then add corn starch.
Stir continuously to avoid the lumps and cook for 5 minutes on medium heat.
Add in the1/4 sweet corn, cover & simmer for a minute, then add spring onion, stir well.
Serve Chinese Sweet Corn Soup warm.
