Cream of Potato with Cauliflower Soup | This Delicious Soup Bowl Is Rich, Creamy, Deep, Nutty & It Will Make Anyone A Cauliflower Fan!
2 tablespoons olive oil or butter or any regular oil
1 tablespoon garlic, chopped
1 large onion, diced
2 large potatoes diced
Salt to taste
Pepper to taste
1-litre vegetable stock or water
1/4 cup heavy cream or evaporated milk
Chopped fresh parsley or coriander to serve
Paprika, pepper & 1 tsp cream to serve
Warm the olive oil in a large pot over medium-high heat.
Sauté garlic until fragrant, then add onion and sauté for 2 to 3 minutes or until softened.
Add potatoes and sauté for 2 minutes, then add cauliflower and mix well.
Now add salt, pepper, and vegetable stock, cover and bring to the boil and simmer for 15 minutes
or until vegetables are tender.
After 15 minutes, turn off the heat and blend, now turn on the heat, add in the heavy cream and stir until well combined.
Cover and allow to simmer for 1 minute, before serving sprinkle some black pepper, paprika, parsley, and 1 tsp of cream.
Enjoy the cream of cauliflower soup when it's warm.
