1. Green Peas Rice
Ingredients:
1-cup basmati rice (20 to 30 min presoaked)
1 tbsp oil
1/2 cup green peas
2 tbsp mint
1 tsp ginger garlic paste
1/2 tsp salt
1 cup of water
1 number green chilli
2 cardamom
1-inch cinnamon
4 cloves
6 to 8 cashews
Method:
Heat oil in a pan, add cardamom, cinnamon, cloves & cashews.
Fry for a few seconds. Add ginger-garlic paste and chilli, saute for a minute.
Add mint and green peas, saute until the raw smell goes.
Then add salt and add water, bring the water to a boil.
Add presoaked rice, bring it to boil, cook until 90% of water is absorbed.
Reduce the heat to low and cook covered for 2 to 3 minutes.
2. Cumin Rice (Jeera Rice)
Ingredients:
1-cup basmati rice (20 to 30 min presoaked)
1 tbsp oil
2 tbsp coriander leaves
1 to 2 tbsp fried onion
1 tsp cumin seeds
1/2 tsp salt
1 cup water
1 green chilli
Method:
Heat oil in a pan, add cumin seeds let it splutter, then add chilli & coriander, fry for few seconds.
Add water & salt bring the water to a boil.
Add presoaked rice, bring it to boil, cook until 90% of water is absorbed.
Sprinkle fried onion and reduce the heat to low and cook covered for 2 to 3 minutes.
3. Ghee Rice
Ingredients:
1-cup basmati rice (20 to 30 min presoaked)
1 tbsp Ghee
1 tsp salt 2 cardamoms
1-inch cinnamon
4 cloves
1-inch ginger
5 to 6 garlic
6 cashews
Saffron strands
Method:
Melt the ghee in a pan, add cardamom, cinnamon, cloves & cashews. Fry for a few seconds.
Add ginger-garlic paste, saute for a minute.
Then add water, salt and saffron strands, bring the water to a boil.
Add presoaked rice, bring it to boil, cook until 90% of water is absorbed.
Reduce the heat to low and cook covered for 2 to 3 minutes.
