Vibrant Pumpkin Puri | Poori Recipe

2 1/2 cups wheat flour
200g sweet pumpkin
1 cup water
1/2 tsp salt
1 tbsp rava | fine semolina
Oil (for frying)
Peel and chop the pumpkin into thin pieces.
Add water and let the water gets warm.
Now, add pumpkin and salt, then stir well.
Cover and cook the pumpkin until soft.
Turn off the heat and mash the pumpkin into a smooth paste consistency.
Let the pumpkin cool down completely before adding flour.
Next, add rava/fine semolina, and flour a little at a time.
Use the spatula to mix the dough in the being.
Mix the dough well and let the dough rest for 10 minutes.
After 10 minutes, transfer the dough to the kitchen counter and knead well.
Now, pinch a small ball size dough and flatten it.
Dust the dough and roll a slightly thick circle using a rolling pin.
Drop the rolled dough into the hot oil. Press gently until the puri puffs up, and splash oil to puff up fully.
Next, Flip the puri and fry until it turns golden brown.
Drain off the excess oil and enjoy it with curry, sabzi, or gravy.
