Sweet & Tangy Bitter Gourd Fry | Karele Ki Sabzi
Ingredients:
3 Bitter Gourds
2 tbsp Oil
1 large onion
1 large tomato
Salt to taste
Tamarind extract (Gooseberry size)
1 1/2 tsp curry powder
2 tbsp jaggery powder
Method:
Wash the bitter gourds, slit them vertically and remove the seeds. Cut into 1-inch pieces.
Heat the oil in a pan and Sauté the onion until it turns brown. Add tomato and salt. Sauté.
Add the bitter gourds and cover and cook it on low heat for 8 to 10minutes.
Add tamarind extract, jaggery & curry powder mix well.
Cover and cook it on a low heat for 5 more minutes.
Serve hot with rice & roti.
