Bourbon Biscuit | BOURBON BISCUIT WITHOUT OVEN: Is Not That Difficult As You Think
Ingredients for biscuits:
150g unsalted butter
1 cup powdered sugar
1 tsp vanilla essence
2 cups all-purpose flour (maida)
5 tbsp cocoa powder
1 tbsp baking powder
A pinch of salt
4 tbsp milk
Some sugar
Method:
In a large bowl add the butter and beat until its soft.
Then add powdered sugar, and vanilla essence. Beat until light and fluffy.
Now add in the flour, cocoa powder, baking powder, salt, stir until well combined.
Add milk in 2 batches to the and combine, the mixture will form a thick dough but should be moist enough to roll or shape the biscuits.
Take the dough, flatten its slightly and roll into a big circle between butter papers or wax papers. (1 cm thickness)
Trim the edges and cut the biscuits into a rectangle shape. (approx. 6 cm / 3 cm).
Preheat the heavy pan for 5 minutes on low heat, and place the aluminium foil over the pan.
Now place the biscuits, prick the biscuits with a toothpick and then sprinkle some sugar over the biscuits.
Cove and bake the biscuits for about 25 to 30 minutes on low-medium heat.
(You can also bake in the oven, 180° C for 12 to 15 minutes).
Let it bisuits cool for 10 to 15 minutes before filling the cream.
For cream icing:
50g butter
1 cup powdered sugar
1 tsp vanilla essence
1 tsp milk or little extra if needed
2 - 3 tbsp cocoa powder
Method:
Beat the butter and then add powdered sugar, vanilla, milk and combine.
Now add cocoa powder and beat for 3 minutes.
Fill the cream inbetween 2 bistuits and gently press. Store in an airtight container for several days.
