Restaurant Style Tiffin Sambar | Drumstick Sambar | (Part 2)

Ingredients:


  • 1 cup masoor dal (Lentil)

  • 3-4 drumsticks (cut into 2-3 inch)

  • 3 small eggplants

  • 1 1/2 tbsp oil 

  • 1 tsp mustard seeds

  • 1/2 tsp cumin seeds

  • Some curry leaves

  • 10-12 shallots (small onion)

  • 1/2 cup tomato

  • 3-4 tbsp sambar powder(watch sambar powder part 1 video)

  • Salt to taste

  • Tamarind extract (small marble size)

  • 1 tbsp jaggery powder

  • 1 tbsp ghee

  • Some coriander

  • Water (as required)


Method:


  1. Wash and drain the dal. pressure cook the dal with 2 cups of water for 3-4 whistles and keep that aside.

  2. Cook the drumsticks around 1 cup water,  once the drumsticks are half cooked add the eggplant and cook that for 3 to 4 mins. Keep that aside.

  3. Heat oil, add mustard seeds & let it splutter. Add cumin seeds & curry leaves, saute.

  4. Add shallots & saute, add tomato cook for 1-2 mins.

  5. Now add sambar powder mix well,  then add cooked drumsticks, eggplants,  dal & water. Mix well.

  6. Add salt, tamarind extract, jaggery & ghee.

  7. Add some coriander And cook it for 8-10 mins.
