Restaurant Style Tiffin Sambar | Drumstick Sambar | (Part 2)
1 cup masoor dal (Lentil)
3-4 drumsticks (cut into 2-3 inch)
3 small eggplants
1 1/2 tbsp oil
1 tsp mustard seeds
1/2 tsp cumin seeds
Some curry leaves
10-12 shallots (small onion)
1/2 cup tomato
3-4 tbsp sambar powder(watch sambar powder part 1 video)
Salt to taste
Tamarind extract (small marble size)
1 tbsp jaggery powder
1 tbsp ghee
Water (as required)
Wash and drain the dal. pressure cook the dal with 2 cups of water for 3-4 whistles and keep that aside.
Cook the drumsticks around 1 cup water, once the drumsticks are half cooked add the eggplant and cook that for 3 to 4 mins. Keep that aside.
Heat oil, add mustard seeds & let it splutter. Add cumin seeds & curry leaves, saute.
Add shallots & saute, add tomato cook for 1-2 mins.
Now add sambar powder mix well, then add cooked drumsticks, eggplants, dal & water. Mix well.
Add salt, tamarind extract, jaggery & ghee.
Add some coriander And cook it for 8-10 mins.
