Curried Zucchini & Mushrooms Recipe For Roti, Chapati, Puri, Naan & Rice


  • 2 tbsp oil

  • 1 large onion

  • 1 tsp ginger-garlic paste

  • 2 chopped tomatoes

  • 2-3 tbsp curry powder

  • 1 tsp garam masala

  • 1 medium zucchini

  • Salt to taste

  • 1/2 cup water (As needed)

  • 1 cup mushrooms

  • 1/2 cup coconut milk

  • 1-2 green chillies

  • Coriander


  1. Heat oil in a pan, add finely chopped onion and cook for a few minutes or until they turn translucent.

  2. Then add ginger-garlic paste and cook for a few seconds.

  3. Now add tomatoes and saute for a few minutes, then add in the curry powder and garam masala.

  4. Cook for 3-4 minutes an over medium heat. If the pan gets dry, add a splash of water and make sure the spices don't burn.

  5. Add zucchini, salt, water and mix well.

  6. Cover and cook the zucchini for 5 minutes, then add the mushrooms and coconut milk.

  7. Mix well and allow it to cook over medium heat for 2 minutes.

  8. Finally, add green chillies, coriander and mix.

  9. Serve hot with poori, idli, set dosa, chapati.
