Curried Zucchini & Mushrooms Recipe For Roti, Chapati, Puri, Naan & Rice
2 tbsp oil
1 large onion
1 tsp ginger-garlic paste
2 chopped tomatoes
2-3 tbsp curry powder
1 tsp garam masala
1 medium zucchini
Salt to taste
1/2 cup water (As needed)
1 cup mushrooms
1/2 cup coconut milk
1-2 green chillies
Heat oil in a pan, add finely chopped onion and cook for a few minutes or until they turn translucent.
Then add ginger-garlic paste and cook for a few seconds.
Now add tomatoes and saute for a few minutes, then add in the curry powder and garam masala.
Cook for 3-4 minutes an over medium heat. If the pan gets dry, add a splash of water and make sure the spices don't burn.
Add zucchini, salt, water and mix well.
Cover and cook the zucchini for 5 minutes, then add the mushrooms and coconut milk.
Mix well and allow it to cook over medium heat for 2 minutes.
Finally, add green chillies, coriander and mix.
Serve hot with poori, idli, set dosa, chapati.
