Chickpeas Masala | Amritsari Chole Masala | Restaurant Style Chole Masala
400 grams chole / pre-cooked chickpeas
4 to 5 green chillies
5 to 6 garlic cloves
1 tbsp ginger
Salt to taste
¼ tsp cinnamon & cloves powder (I used a mix of both)
A pinch of cardamom powder
½ tsp cumin seeds
3 tbsp oil
½ tbsp coriander powder
½ tsp chilli powder
½ dry mango powder
½ tsp cumin powder
Add onions, tomatoes, chilli, ginger, garlic, and blend into a smooth paste in a blender.
Heat oil in a pan, add cumin seeds and let them pop.
Reduce the heat, add cardamom powder, cinnamon, cloves powder and stir.
Now add masala paste & 1/2 cup water.
Cover and cook the masala until the raw smell goes.
Add coriander powder, chilli powder, garam masala, dry mango powder, turmeric powder and cumin powder.
Mix well and cook the masala on low heat.
Add in the salt and water and cook for 2 minutes. (Add water depending on your requirement).
Now add pre-cooked chickpeas, cover and cook on low heat for 5 to 6 minutes.
Add coriander leaves, serve with some onion and lemon slices.
