Red Rice Rotti | Leftover Rice Roti Recipe | Akki Rotti
Servings - 3 to 4
Ingredients:
2 1/2 cups leftover cooked red rice
1 cup water (as needed)
Salt, to taste
Green chillies, chopped
Curry leaves, chopped
Fresh coriander, chopped
1/2 rice flour
1 onion, finely chopped
Oil, for cooking
Method:
Add leftover red rice to a blender with some water and grind into a smooth paste.
Transfer to a bowl and add salt, green chillies, curry leaves, and coriander. Mix well.
Add rice flour and mix to form a soft dough-like batter.
Just before making rotis, add chopped onion and combine.
Take a portion of the mixture, place it on wax paper or roti paper, and gently press to shape into a thin roti.
Heat a pan and cook the roti on both sides with a little oil until golden and cooked through.
Serve hot with coconut chutney or any dip of your choice.
