Red Rice Rotti | Leftover Rice Roti Recipe | Akki Rotti

Servings - 3 to 4



Ingredients:  



  • 2 1/2 cups leftover cooked red rice  

  • 1 cup water (as needed) 

  • Salt, to taste 

  • Green chillies, chopped 

  • Curry leaves, chopped 

  • Fresh coriander, chopped 

  • 1/2 rice flour 

  • 1 onion, finely chopped 

  • Oil, for cooking  



Method:  



  1. Add leftover red rice to a blender with some water and grind into a smooth paste.

  2. Transfer to a bowl and add salt, green chillies, curry leaves, and coriander. Mix well. 

  3. Add rice flour and mix to form a soft dough-like batter. 

  4. Just before making rotis, add chopped onion and combine. 

  5. Take a portion of the mixture, place it on wax paper or roti paper, and gently press to shape into a thin roti. 

  6. Heat a pan and cook the roti on both sides with a little oil until golden and cooked through. 

  7. Serve hot with coconut chutney or any dip of your choice.
