Long Aubergine Recipe | Badanekayi Palya | Brinjal Fry Recipe


  • 6 long eggplant  

  • 3 - 4 tbsp oil 

  • 1/2 tsp mustard seeds 

  • 1 tbsp sesame seeds 

  • Few curry leaves 

  • 2 onions   

  • 1 tsp turmeric powder 

  • Salt to taste 

  • 1 tsp garam masala 

  • 3 tbsp sambar powder 

  • 3 tbsp lemon juice 

  • 3 tbsp coconut powder  


  1. Wash, and cut the eggplant lengthwise 2 to 3 cm long pieces.  

  2. Next, heat the oil in a frying pan.  

  3. Add in mustard seeds and let them splutter.  

  4. Add sesame seeds and let them splitter. 

  5. Next, curry leaves and sauté, add onion and cook for 2 minutes.  

  6. Add turmeric and salt, stir well.   

  7. Add in eggplant and give a quick mix, cover and cook for 2 to 3 minutes on medium heat.  

  8. Now add garam masala, sambar powder and mix well. 

  9. Cover and simmer for 2 minutes, then add lemon juice and coconut powder. 

  10. Stir well and serve it with hot steaming rice or chapati, roti or naan.
