6 long eggplant
3 - 4 tbsp oil
1/2 tsp mustard seeds
1 tbsp sesame seeds
Few curry leaves
1 tsp turmeric powder
Salt to taste
1 tsp garam masala
3 tbsp sambar powder
3 tbsp lemon juice
3 tbsp coconut powder
Wash, and cut the eggplant lengthwise 2 to 3 cm long pieces.
Next, heat the oil in a frying pan.
Add in mustard seeds and let them splutter.
Add sesame seeds and let them splitter.
Next, curry leaves and sauté, add onion and cook for 2 minutes.
Add turmeric and salt, stir well.
Add in eggplant and give a quick mix, cover and cook for 2 to 3 minutes on medium heat.
Now add garam masala, sambar powder and mix well.
Cover and simmer for 2 minutes, then add lemon juice and coconut powder.
Stir well and serve it with hot steaming rice or chapati, roti or naan.
