Bhindi Masala South Indian Style | Curried Okra
Ingredients:
1/2 kg Okra /Bhindi, chopped
3 tbsp oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/4 tsp turmeric powder
Few curry leaves
2 medium onions, chopped
3 medium tomatoes, chopped
2-3 tbsp curry powder
1/4 - 1/2 cup coconut paste
Salt to taste
Some coriander
1/2 water (or as required)
Method:
Heat a large nonstick pan.
Add one tablespoon oil and then add chopped okra, mix and coat the okra with oil and reduce the heat.
Fry, and stir frequently. Fry the okra until browned on all sides.
(Keep that aside and use the different pan for making the curry or remove to a plate and use the same pan).
In a pan, heat two tablespoons of oil and then add mustard, cumin seeds.
Let it splutter, then add curry leaves and sauté.
Add the onion sauté for a minute or fry until it softens.
Now add the chopped tomatoes and sauté, add salt, turmeric powder and mix well.
Cover and cook until tomatoes are soft. Add curry powder, coconut paste, water and mix.
Fold in the fried okra and cover & simmer on medium heat for 5 minutes or until done.
Add in some coriander stir and serve with Dosa, Idli, Chapati, Poori, Roti, Rice and Naan.
