Chicken Lollipop Step by Step Recipe | DRUMS OF HEAVEN Indo-Chinese

Ingredients for the chicken lollipops marinade:

  • 600 g chicken wings 

  • 1 tbsp ginger-garlic paste 

  • 1 tbsp sesame oil 

  • 1 tbsp soy sauce 

  • 1 tbsp green chilli sauce 

  • 1/2 - 1 tbsp red chilli sauce 

  • 1/2 tsp salt 

  • 1 egg white 

  • 30 g all-purpose-flour 

  • 30 g cornstarch 

  • Oil for deep frying  

For the sauce: 

  • 1 tbsp tomato ketchup 

  • 1 1/2 tbsp red chilli sauce 

  • 1 tbsp soy sauce‍ 

  • 1/4 cup chicken stock or water 

  • 2 tbsp oil 

  • 1 tbsp ginger, chopped 

  • 1 tbsp garlic, chopped 

  • 1 large red onion, chopped 

  • Salt to taste 

  • Pepper to taste 

  • Spring onions  

Step 1 - Making the lollipops: 

  1. Using a sharp knife, cut the chicken wing into two parts between the joint. 

  2. Cut around the tip of the bone to loosen the skin, scrape and gather the meat to one side. 

  3. Then turn the meat inside out and make it look like a lollipop. 

  4. The other part of the wing has two bones joined, separate the small bone and discard. 

  5. Gather the meat to one side, turning the meat inside out.  

  6. Repeat and make all the wings look like lollipops.


Step 2 - Marinating for the chicken lollipops:   

  1. In a small bowl, mix in the ginger-garlic paste, sesame oil, soy sauce, green chilli sauce, red chilli sauce, salt, and egg white. 

  2. Pour the sauce onto chicken lollipops, coat them well, and leave them to marinate for 15 - 20 minutes.   

Step 3 - Sauce for the lollipops: 

  1. Combine tomato ketchup, red chilli sauce, soy sauce and chicken stock in a bowl. 

  2. Heat the oil and add the ginger and saute, then add garlic saute until golden brown. 

  3. Add the onion and cook for 2 minutes on high heat. 

  4. Now add the salt, pepper and mix well, then add in the sauce mixture.  

  5. Reduce the heat and cook for a few minutes until the sauce gets thick and sticky. 

  6. Turn off the heat.  

Step 4 - Frying the lollipops: 

  1. Add in the all-purpose flour and cornstarch to the marinated chicken and coat well. 

  2. Heat the oil in a deep frying pan until it is very hot.  

  3. Add the lollipops to the hot oil, do not overcrowd the pan. 

  4. Fry the lollipops until golden brown and crispy. 

  5. Now re-heat the sauce and turn off the heat, add spring onion and mix.  

  6. Now add the fried chicken lollipops to the pan and coat well. 

  7. Garnish with spring onions and serve hot.
