Leftover Rice Roti | Gluten-Free Roti With Cooked Rice | Akki Rotti

2 cups rice (cooked / leftover)
1 cup water
1/2 cup rice flour
Salt to taste
In a blender, add cooked rice and water.
Blend to smooth paste and transfer the rice paste to a mixing bowl.
Add salt, and add rice flour little by little; combine well.
Knead to a smooth and soft dough. Roll the lemon-sized rice dough into a ball and flatten it.
Pat and flatten with the help of palm and finger on a greased wax paper.
Place the roti on a hot tawa and gently press.
Cook the roti for a minute and spread oil over the roti.
Flip, spread oil and cook the roti on both sides until done.
Serve rice roti with chutney or palya.
